For the boiling point demonstration, draw a little hot water – hot but no longer boiling – into the syringe, point the tip upwards and push out the trapped air. Seal the tip with a fingertip or a cap and then pull the plunger back steadily. The space above the water is now at reduced pressure, and the water starts to boil even though it is cooler than its normal boiling point. Push the plunger back in and the boiling stops. Students see directly that boiling point depends on the pressure above a liquid, the same reason water boils at a lower temperature on a high mountain and food cooks faster in a pressure cooker.
Hold the barrel with a cloth because the water is hot, keep the tip firmly sealed while pulling, and never heat the plastic syringe directly over a flame; warm the water separately instead. The sealed syringe also gives a quick feel for Boyle’s law, since trapped air pushes back harder the more it is compressed, and this makes a good introduction before students take measured readings on a Boyle law apparatus.
