What Is Sodium Bisulphite Used For?

For the bisulphite test, students prepare a freshly saturated solution of the salt in water, add a few drops of the carbonyl compound and shake well; aldehydes such as benzaldehyde and methyl ketones such as acetone form a white crystalline addition product, often after cooling the tube in cold water. The test complements the DNP (dinitrophenylhydrazine) test, which detects the carbonyl group in general, and the Tollens and Fehling tests, which pick out aldehydes. At college level, the same addition reaction is used to separate an aldehyde from a mixture and recover it later by warming with dilute acid or alkali.

As a reducing agent, a dilute sodium bisulphite solution decolourises iodine, removes excess chlorine from water samples, and clears brown manganese dioxide stains from glassware after permanganate titrations. Solutions lose strength on standing, so make them up fresh. Contact with acids releases sulphur dioxide, so work in a ventilated area and keep acids apart on the shelf.
